Summer is settling in, and with it, the pleasure of gathering around a good table.
On Friday 31 July and Saturday 1 August (evening), the Domaine de l’Ambassadeur welcomes Benjamin Daenen (RHIZHOME) for a weekend of pop-up fine dining in Ébly (Léglise).
RHIZHOME offers a precise yet generous signature cuisine, inspired by nature, the local terroir… and the season. Over two evenings, we invite you to discover two menus designed as mirror images of one another, enjoyed in the peaceful atmosphere of the Domaine.
The chef’s wager: roe deer in July, going against the grain of autumn game. This is the height of the stalking season, and the summer buck, fed on grass, has delicate flesh. The chef treats it in a summery way — floral, vegetal, with acidity, flowers and foraged herbs. The animal is used in its entirety, from the fillet to the carcass.
In mirror image, a plant-based menu built around the garden of the Ferme de Pâques and spelt from the Ferme de Habaru, featuring a glazed, roasted celeriac in a crust that holds its own against the fillet. This isn’t a fallback menu: it’s the other half of the same story.
Two menus to choose from, €85 per person (drinks not included)
Each guest chooses their menu individually — two people at the same table are welcome to have one order the Roe Deer Menu and the other the Plant-Based Menu.
