On 4 and 5 April, Domaine de l’Ambassadeur welcomes Benjamin Daenen (RHIZHOME) for a pop-up restaurant. Two tasting menus (5 or 7 courses), with optional wine pairings.
Spring is settling in, the light is changing… and the desire to gather around a beautiful table naturally returns.
On Saturday 4 April (dinner) and Sunday 5 April (lunch), Domaine de l’Ambassadeur welcomes Benjamin Daenen (RHIZHOME) for a weekend pop-up gastronomic table in Ébly (Léglise).
RHIZHOME offers author-driven cuisine that is both precise and generous, inspired by the living world, the terroir… and the season. Over two services, we invite you to enjoy a tasting-menu experience in the peaceful atmosphere of the Domaine.
Two options: 5 or 7 courses
- 5-course tasting menu: €75 (drinks not included)
- 7-course tasting menu: €95 (drinks not included)

Confit egg yolk, foie gras from Ferme de Floumont, red onion chutney, Périgord espuma and croutons

Kimchi, white miso–dashi vinaigrette, peanut praline & crumble, chilli oil and kaffir leaves

Roasted trout fillet from “fourneau marchand” (additional dish – 7-course menu)
Spelt risotto from Ferme d’Habaru, saffron from Laurence, chorizo crumble, crunchy vegetables and lacto-fermented condiment (summer preserves)

“Coucou” from Ferme des Sens in two ways
Skin-on roasted fillet, root-vegetable variations and reduced jus • thigh fricassee “waterzooi style”, lacto-fermented vegetables and leek oil

Yacon from Safranloy, served fresh
Poached with local honey & lemon thyme, crispy chips, cultured buttermilk (lait ribot) ice-cream parfait, oxalis, sorrel vinaigrette & olive oil
